
Les Gras d’Huile

Single vineyard based on the 2021 harvest with 81% perpetual reserve from 2015 to 2020
All wines rest for six months after disgorgement before leaving the estate.

The soils of the plot Les Gras d’Huile are worked only under the vines, while the rest is naturally covered with indigenous plants.
For the protection of this plot, we use only copper, sulfur, and fermented extracts of burdock and sage.
The Wine
Winegrowing at the estate is kept very simple: we intervene only when necessary, and nothing is systematic.
Our main goal is to allow the purest expression of the terroir.
Each year, the cuvée Les Gras d’Huile is made primarily from a single harvest, complemented by perpetual reserve wines started in 2015 from this same vineyard.
Alcoholic fermentation occurs spontaneously in our barrels, thanks to the vineyard’s native yeasts. Sometimes, before harvest, we make a micro-picking to create a yeast starter, facilitating fermentation.
We never use sulfur at harvest; the must flows directly from the press to the barrels to start fermentations.
Sulfur is added only lightly after fermentation and remains the only input used.
Racking takes place during fermentation, causing the overflow of barrels filled to 100% to expel the inert parts and retain the pulp.
Our wines age in 228-liter barrels for at least 11 months, on their lees. We do not stir our wines, except in case of undesirable oxidation.
The wines are topped up only after fermentation, until the arrival of warmer spring periods.
Bottling takes place at the estate at the end of July or beginning of August, followed by 30 months of maturation before disgorgement.
The dosage of our wines is adapted to each cuvée and varies from year to year.
We do not practice fining, filtration, or tartaric stabilization. This is why a very light deposit may be present in the bottle.
