This Coteaux Champenois Rouge was produced from the parcel Les Hautes Sources Souris in 2022.
The parcel “Les Hautes Sources Souris” brings finesse, length, and even a certain reserve to this Pinot Noir, nonetheless supported by present tannins.

The soils of the parcel Les Hautes Sources Souris are worked only under the vine rows, with the inter-rows protected by ground cover mainly composed of white clover established 10 years ago, progressively and naturally replaced each year by more indigenous plants.
For protecting this parcel, we use only copper, sulfur, and fermented extracts of burdock and common sage.
The Wine
We keep winegrowing and winemaking interventions to a minimum: we act only when necessary, and nothing is systematic.
5 days of cold maceration, controlled with dry ice, followed by 13 days of warm maceration.
20% seed removal was carried out, along with the addition of 10% ripe stems.
Malolactic fermentation occurred spontaneously in spring 2023.
No filtration or fining was performed.
